Basil is a fantastic herb to grow in an outdoor pot or window box as the case may be here on #windowboxwednesday. :) We harvest basil a few times a year to make fresh pesto and then freeze the rest to enjoy during the winter months.
Here is our favorite recipe for basil pesto, straight out of The Joy of Cooking. This recipe makes one cup of pesto.
Combine in a food processor and process to a rough paste: 2 cups loosely packed basil leaves 1⁄2 cup grated Parmesan 1⁄3 cup pine nuts 2 medium garlic cloves, peeled
With the machine running, slowly add: 1⁄2 cup olive oil, or as needed
If the pesto seems dry (it should be a thick paste), add a little more olive oil. Season to taste with: Salt and black pepper
Pour your desired amount of pesto on top of warm pasta or spaghetti squash and you have a delicious dish.
If you're freezing it, pour the pesto in an ice cube tray, cover and freeze. Once frozen, put the frozen pesto cubes into a freezer zip-lock bag and re-freeze until you are ready to use them. Enjoy the taste of summer all year long!

All about #trees! Several beautiful ones on the grounds, with amazing shapes, seasonal colors, and interactions with the sunrise and sunset views. But which pic doesn’t belong? Any guess where it’s taken?
Have I ever told the story of the snake plants I have all over my house? You guys, these things are freakin survivors! They’re over 30 years old. My parents got 2 snake plants when they got married, and over the years, the plants have been divided and split so many times. Last time I counted there were over 25 of these descendants between my mother’s house and mine.
They’re pretty much invincible. They’ve survived many moves, they’ve almost been murdered by me multiple times as I clumsily learned how to care for them, they’ve been attacked by cats, and they’ve been stuck in dark rooms for far too long.
Throughout all the trial and error, they’ve been a part of my entire life. They were there the day I was born and came home from the hospital. They were there as I grew through childhood. They were there through my first marriage and divorce. They were there when I brought Noah home for the first time. They’ve seen me laugh and cry and celebrate and mourn. And now they’re about to start their new life in our forever home. I can’t wait to show them their new house. These guys are going to love it just as much as I love them.
Moral of the story: Snake Plants are vampires. The end. 🤣 (You know me, I’ve gotta ruin the mushy moment somehow, right?)
