I wouldn't be 100% mexican if i didn't love tacos with all my heart 😛 but guess what! i DO! 🤠😜 Today I'm sharing one of my fave tacos recipe 👇💕 Hope you give it a shot! And btw! For these tacos I made some Corn-quinoa-amaranth tortillas with @morama.mx tortilla flour and they were so so good😍. Now, let's dig in!
[Vegan Alambre Tacos]
-100 gr onion, lengthwise sliced
-200 gr bell pepper, lengthwise sliced (any color will work, or a combination of them, although red, yellow, and/or orange are tastier)
-380 gr mushrooms, sliced
-1/2 tbsp seasoning juice (can skip that if you don't have it handy or sub for soy sauce)
-1 small orange or 1/2 large orange, juiced
-1.5 tbsp lime juice
-1 tsp garlic powder
-Pinch of cumin powder
-Salt and pepper to taste
* Avocado Salsa:
-1/2 large avocado
-1/2 serrano chilli
-Handful of cilantro
-1 or 2 limes, juiced (depends on how acid you like the salsa, I always put a lot of lemon juice;))
-Salt to taste
1.- In non-stick skillet, sauté onion until translucent and a little bit roasted.
2.- Add bell pepper and continue stirring until slightly roasted. Next, add mushrooms, seasoning juice/soy sauce, orange juice, lime juice, garlic powder, cumin, salt and pepper.
3.- Let cook for about 10 minutes over low heat, stirring a few times during that time.
4.- For the avocado salsa just blend all the ingredients.
5.- Once the veggies are ready, serve on corn tortillas and add some avocado salsa on top.
When you lookin’ this shredded 💪🏼 for summer, there is no need for additional fillers. But, uhm just in queso, you can leave the guac 😅.
