Was pretty proud of this buffalo cauliflower and ranch dressing I made the other night 🙆🏼♂️. Would you judge me if I told you I went through this entire plate as soon as the picture was taken? 🤔🤔😛
The cauliflower was baked for about 25 mins at 385F and then I simply tossed the florets in some sriracha before baking them for another 5-8 mins. I drizzled some more on before devouring the plate. .
For the sauce:
I had some left over soaked cashews so I tossed those in a blender with some nutritional yeast (~2tbsp), almond milk (~1/8 Cup) and some salt and pepper. The sauce came out really flavourful and you could add more cashews or milk depending on the consistency you were after. Such a delicious and reasonably healthy snack! I will definitely experiment with these again!!! 🌱

OK guys, so I got some good news and some bad news 🙂🙃 Bad news is I would have killed my Caladium if it wasn’t for the good news. Good news is I saved it! It was a close call but luckily it bounces back as fast as it withered away. I knew something was up when the soil stayed wet suspiciously long (even though I didn’t water). When the soil doesn’t dry out, there are two solutions: Give the plant more light and/or a soil with better drainage, just don’t wait for too long or you’ll have a classical case of root rot and a dead plant waiting on you! When I finally checked the roots on the Caladium, they were almost completely gone due to rot (I could have kicked myself in the arse for waiting on using 2 minutes to just check the roots when I knew something was up 🤯). I cleansed off any soil and rotting parts and looked at the sad remaining roots, squishy tubers and limp leaves thinking ‘this is not going to work’. I changed the pot size from 17 to 12 centimeters and added a potting mix loaded with perlite for better drainage. The following days the leaves kept on withering but then new leaves began peeping through the soil surface!
